GUATEMALA CUILCO COFFEE - 227g
Against temperatures of low to mid-twenties (C) and heavy humidity, coffee is grown around the Cuilco Village in limestone soil. A mix of Caturra, Typica, and Bourbon varieties are cultivated in small lots and, in most cases, processed via a traditional ‘washed’ method.
The coffee is pulped by hand and fermented for 22-24 hours. After fermentation, the coffee is washed and moved to the water channels. Once the water runs clear, the coffee is then moved to patios. The coffee dries for 7-10 days during a sunny period, or up to 20 days when cloudy or overcast. After the coffee is dried, every single batch is cupped and combined with batches of similar qualities and profiles together to create lots with unique profiles. This coffee showcases a rich chocolate body with a muscat raisin sweetness and a cocoa aroma.
